I forgot to eat lunch today, and now I'm really hungry. Wah. Can't go grab anything, since I have a(nother) meeting in half an hour and anyway it's so late it'll just mess up my dinner time. But I'm huuunggrrrry. Ooh, but last night I made "chicken fried chicken" ... or whatever. It was really good. I love simple recipes like this, because I usually don't feel like cooking at all once I get home from work, though I enjoy it. Anyway,
Chicken Fried Chicken
30 saltine crackers
6 skinless, boneless chicken breast halves
2 tablespoons all-purpose flour
2 tablespoons dry potato flakes
1 teaspoon seasoned salt
1/2 teaspoon ground black pepper
1 egg
1/4 cup vegetable oil
1 Place crackers in a large resealable plastic bag; seal bag and crush crackers until they are coarse crumbs. Add flour, potato flakes, seasoned salt, and pepper to bag and mix well.
2 Beat egg in a shallow dish or bowl; heat oil in a large skillet over medium high heat.
3 One by one, dredge chicken pieces in egg beat, then place in bag with crumb mixture, seal bag and shake to coat.
4 Reduce heat to medium and cook coated chicken in skillet for 15 to 20 minutes, turning frequently, until golden brown and juices run clear.
I may have given the impression that I'm Oscars-crazy. Hahaha, that couldn't be further from the truth. I normally despise awards shows. Celebrity watching usually leaves me cold (I can't even watch them host SNL or get interviewed or whatever), because I don't want to know anything about them. I don't care. I want to enjoy film, and TV, and whatever else w/o having to know anything about the actor who portrays the character. It's hard to avoid, though, and w/ certain actors, I'm fascinated despite myself. But I'd rather look at their work than their personal lives any day. In any case, I love movies and television, so it's always interesting to see movies that are supposed to be the "best," as determined by those who are supposed to know what they're talking about.
OMG have given in to stomach, which was threatening to eat itself, and grabbed a package of Easy Mac. It tastes far better than dried carbohydrates and powdered cheese should. *weeps*
