Happy post-Super Bowl! At this time next year, I'll have forgotten who actually played in it, but that's okay. I'm just happy the Patriots lost, and I don't mind the Eagles, so.

I wasn't as productive this weekend as I wanted... I still haven't set up my new coffee table. >< I don't know why I'm procrastinating; I really love it and I want to make sure there are no missing pieces and all, but... I just don't feel like putting it together!

I did make a couple of delicious things, though. :D

One was an Instant Pot chili that turned out really well, even though it was soupier than I usually like my chili to be (my fault; I changed the recipe a bit and added more liquid, so I knew this was a possibility). This was the recipe I used.

Changes I made:

probably won't affect anything:
- I used 1lb ground beef and like 1/4lb bison, just cuz I had it leftover
- I used beef stock (Better than Bouillon) instead of chicken

changes that probably made a difference:
- I used two cans of black beans instead of kidney beans. I'm not a huge fan of beans in general, and I prefer black to kidney, and I had them in my cupboard, so. I couldn't drain them very well, though, so they might have added more moisture than desirable
- I did use the brown sugar at the end (like them, I used 1tbsp) and did NOT add the apple cider vinegar
- I did not use a full 28oz can of crushed tomatoes. In fact, I didn't use crushed tomatoes at all, I used whole peeled tomatoes from those large cans you get at TJ's. But I didn't use the whole can; I used maybe 2/3 of it, because it was leftover from another meal I made before.
- I used a whole 10oz can of Las Palmas chile sauce

As for the chili powder, I used the Fiesta Chili Powder that I think I got at Whole Foods.

If I make this again, and make the same changes, I think I'd have to double the amount of meat, and possibly add another can of beans, in order for the liquid ratio to be right. OR I'm thinking that instead of the 1 cup of stock, I'll just use the can of chile sauce as the liquid, and either mix the bouillon paste into that, or use the powdered form of bouillon.

The other thing I made, that was a smashing success, was Maangchi's Dakgangjeong (Korean fried chicken wings with sticky sweet/sour glaze). Ohmygosh they were SO delicious. I'm not normally a huge fan of sweet with meat, but this was just the right amount. It reminded me of Pok Pok's chicken wings in how delicious they were, even though they have different flavor profiles. Day-um. I normally dislike frying things at home because it's so much trouble, you have to find a way to get rid of all that oil afterward, oil splashes everywhere, and your house smells like the stuff you fried for a long time... but IT WAS TOTALLY WORTH IT. Even the smell was totally fine because IT SMELLED DELICIOUS. I was happy to keep smelling it, lol.

Also saw the movie Winchester. I was baffled by Helen Mirren choosing to be in a horror movie, but Jade said the story of the Winchester mansion is really cool and we're even planning on visiting it during our trip to the Bay Area (way) later this year. After seeing it, I'm still baffled by HM's decision to do a horror movie. I am so sick and tired of horror movies relying on the music and quick cuts to scary faces to be "scary." It's not scary; it's startling and that's all. Actually BE SCARY instead of using these cheap tricks, if you're going to make a horror movie ffs.
