Need vegetarian recipes, stat!

Okay, I've now finished Heroes S2 (yes, as it turns out, I only had 1 episode left).
- Poor David Anders. That is seriously one of the most horrible ways to die I can think of. Made even worse, of course, by the fact that he can't die. *shudder* But does this mean they're really done with Adam? :( He makes such a better baddie than Sylar. I wish the latter would just GO. AWAY.
- Oh no! re: Nathan. But is he actually dead? People dying on this show was always kind of sketchy, but now that they've introduced this miracle drug with Claire's blood and what not, death has become even more trivialized. They seem to keep putting their eggs in one basket, blowing that basket up, and then whipping out another basket while trying to convince us that it's the same basket as before.
- So color me intrigued. With Adam underground, Elle beginning to waver, and Linderman dead, who exactly are the Villains of S3? There's Sylar, of course (though come on, we already experienced that storyline in S1 unless they do something drastically different). Bob? I'm so not afraid of Bob. Claire's dad? But we know he's not really a villain. So are they introducing others?
- Maya has to die at some point, right? I even say that due to plot reasons and not just because I find her annoying. I mean, her power is pretty much useless to good guys, and a little too powerful to use on bad guys -- cuz then she could just take everyone out by herself. The whole point of her power is so that Sylar can get it, right?
- Elle, Elle. I hope she doesn't plan to be her daddy's little puppet forever.
- Nikki can't really be dead. I'd think Ali Larter is too entrenched as one of the show's stars to just kill her off for no reason. Or I can't imagine that if they did want to kill her off, that's the way they'd go about it. And as I said before, 'death' is so trivial with the whole Claire's blood concoction. I just don't know how they're going to explain her surviving that explosion or recovering from it w/o the blood thing. Or I could be wrong and they really did kill her off.

I'm trying to come up with a menu for my cousin's dinner. I think I'm definitely going to make the creamy scallop soup, but that's more like an appetizer. I'm totally stuck on the main course. I'm not sure if I want to do another seafood thing, or have it be purely vegetarian as per her husband's preferences. Every time I think of a vegetarian meal, I realize that there's a meat element to it (like spaghetti ... with meat sauce. Or broth-boiled kale with a poached egg on toast ... but the broth is chicken. SIGH). At least I don't have to worry about the dessert -- her dessert slave is going to make a black forest cake. I LOVE black forest cake, so I'm really looking forward to that! Anyway, I'm now prowling Orangette's list of vegetarian recipes to see if something strikes me (this Tarte à l'Oignon looks good, and easy). Do any of YOU have good vegetarian main course recipes to share ... she asked hopefully?

Date: 2009-02-11 11:56 pm (UTC)The thing I really love, that's kind of nifty and 'special' is a big stuffed eggplant. You use:
However many eggplants you need so everyone has their own half.
Zucchini
Tomato
Plain Yogurt
Cornflake breadcrumbs
Parmesan cheese
Onions
Garlic
Olive Oil
Whatever else you might desire/have on hand/think would go well
Spoon out the eggplant (like we did w/those zucchini boats) after you halve them. Chop up an onion. Heat the oil, add onion & garlic to it. While it's cooking, chop up everything else as fine as you can stand to have it. Toss the eggplant & zucchini in with the onions & garlic, cook until tender. Toss everything else in a bowl, mix together; add the stuff from the pan, mix together. Now stuff your eggplants, bake @ 350 for 25 mins, serve with rice or beans or rice and beans on the side.
