everyone needs a good boning knife, right?

I was reading an article in a magazine about how to perfectly butterfly a trout, and I immediately thought, "Yes. That is something I need to do."

So I ran right out (okay, haha, I totally just ordered it on Amazon in my pajamas) and got this:

Global G-21 Flexible Boning Knife



I don't think I've made any secret of the fact that I love good knives, and Global is one of my favorite brands.

I haven't had a chance to try this knife out yet, but I'm excited to!
